- 1 (12 oz.) package fire-roasted corn

- 4 cups chicken stock
- 2 cups sour cream
- Toppings: Monterey Jack cheese, lime juice, cilantro, queso fresco
Instructions
- Heat olive oil in a large pot over medium-high heat. Add chopped onion and jalapeño; cook until softened. Stir in minced garlic.
- Add chicken breasts, fire-roasted corn, green chiles, and seasonings to the pot.
- Pour in chicken stock; bring to a boil then reduce heat to simmer for 25 minutes.
