  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 + 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate eggs (halved)
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup whole mini chocolate eggs

Instructions

  1. Preheat your oven to 350F.
  2. In a mixing bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in the egg and vanilla extract until well-combined.
  4. Add flour, baking soda, salt, halved mini chocolate eggs, and chocolate chips; stir until just combined.
  5. Scoop out about 1.5 tablespoons of cookie dough for each cookie and place on a lined baking tray. Press whole mini eggs into the tops.
  6. Bake for 8-10 minutes or until the edges are lightly golden but the centers look soft.
  7. Allow to cool on the tray for about 5 minutes before transferring to a wire rack.
