  • 2 Large Eggs
  • 1/2 cup Buttermilk
  • 1/4 cup Vegetable Oil
  • 1 tsp Vanilla Extract
  • 1/2 tsp Espresso Powder (optional)
  • 1/4 cup Hot Water
  • 4 oz Andes Mints (24 mints plus an extra for garnish)
  • 1/4 cup Heavy Whipping Cream
  • 1/4 cup Crushed Chocolate Wafers (about 57 wafers)
  • 1 cup Unsalted Butter (room temperature)
  • 3 cups Sifted Powdered Sugar
  • 56 tbsp Heavy Whipping Cream
  • 34 drops Green Food Coloring
  • 2 tsp Peppermint Extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, mix dry ingredients: flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, combine wet ingredients: eggs, buttermilk, oil, vanilla extract, and hot water until smooth.
  4. Gradually stir the wet mixture into the dry ingredients until just combined.
  5. Fill each cupcake liner halfway with batter. Place an Andes mint in the center and top with more batter until two-thirds full.
  6. Bake for 18-20 minutes until a toothpick comes out clean. Cool completely on a wire rack.
  7. For frosting, beat room temperature butter until creamy; gradually add powdered sugar and mix in heavy cream, food coloring, and peppermint extract until fluffy.
  8. Frost cooled cupcakes and garnish with crushed wafers or extra Andes mints.
