  • 1/3 cup Oil (canola or vegetable)

  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M's

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking pan by greasing or lining it with parchment paper.
  2. For the brownie layer, whisk together sugar, butter, oil, eggs, and vanilla until smooth. In a separate bowl, combine flour, cocoa powder, cornstarch, and salt; gradually mix into wet ingredients and fold in chocolate chips.
  3. For the monster cookie layer, cream butter and sugars; add peanut butter and vanilla followed by the egg. Combine dry ingredients separately and mix into wet mixture before folding in oats, chocolate chips, and M&M's.
  4. Layer half of the brownie batter in the pan, top with monster cookie batter, then swirl remaining brownie batter on top.
  5. Bake for about 40 minutes; check doneness with a toothpick.
  6. Let cool completely before cutting into bars.
