  • 1/2 cup raisins or currants
  • 1/2 cup toasted walnuts or pepitas
  • 1/4 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 1 tsp ground turmeric
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili flakes (optional)
  • 3/4 tsp fine sea salt
  • Freshly ground black pepper, to taste
  • 1 tsp dijon mustard
  • 1 tsp pure maple syrup
  • 2 garlic cloves, minced

Instructions

  1. In a large bowl, combine cooked lentils, grated carrots, diced celery, red onion, mint leaves, raisins, nuts/seeds.
  2. In a separate bowl, whisk together olive oil, lemon juice, spices (turmeric, cinnamon, cumin), salt, and pepper.
  3. Pour the dressing over the salad base and toss gently to coat all ingredients.
  4. Serve immediately or let marinate for at least 30 minutes for enhanced flavors.
