Description

Mushroom Stroganoff is a delightful vegetarian dish that brings together the rich, earthy flavors of cremini mushrooms and a creamy sauce, making it an ideal comfort food.


Ingredients

  • 8 oz egg noodle pasta
  • 1.5 pounds cremini mushrooms
  • 1 onion
  • 3 cloves garlic
  • ½ cup dry white wine
  • 1.5 cups mushroom stock
  • ½ cup sour cream or Greek yogurt
  • Fresh thyme
  • Dijon mustard
  • Smoked paprika
  • Butter

Instructions

  1. Cook the egg noodles according to package instructions in salted water. Drain and toss with butter.
  2. In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté sliced cremini mushrooms until browned; set aside.
  3. In the same skillet, add remaining butter, onions, and garlic; cook until tender.
  4. Deglaze the pan with white wine, scraping up any bits.
  5. Mix flour with mushroom stock and pour into the skillet along with mushrooms and seasonings.
  6. Temper sour cream with hot liquid before mixing into the sauce.
  7. Adjust seasoning with salt and pepper to taste.
  8. Serve over egg noodles and garnish with fresh herbs.
