- 1.5 pounds cremini mushrooms
- 1 onion
- 3 cloves garlic
- ½ cup dry white wine
- 1.5 cups mushroom stock
- ½ cup sour cream or Greek yogurt

- Dijon mustard
- Smoked paprika
- Butter
Instructions
- Cook the egg noodles according to package instructions in salted water. Drain and toss with butter.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Sauté sliced cremini mushrooms until browned; set aside.
- In the same skillet, add remaining butter, onions, and garlic; cook until tender.
- Deglaze the pan with white wine, scraping up any bits.
- Mix flour with mushroom stock and pour into the skillet along with mushrooms and seasonings.
- Temper sour cream with hot liquid before mixing into the sauce.
- Adjust seasoning with salt and pepper to taste.
- Serve over egg noodles and garnish with fresh herbs.
