- 3 ounces white tuna in olive oil

- 4 hard-boiled eggs
- 8 ounces cherry tomatoes
- 1/3 cup extra virgin olive oil
- 1/4 cup lemon juice
- 1 tablespoon minced shallot
- 1 tablespoon Dijon mustard
- 1 tablespoon whole grain mustard
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- Prepare the vinaigrette by shaking all dressing ingredients in a jar and setting aside.
- Boil potatoes until tender, then cut in half and toss with vinaigrette while warm.
