  • 2 cups (300 g) frozen mixed vegetables (peas, carrots, corn, green beans)
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 tablespoons all-purpose flour
  • 2 cups (480 ml) chicken broth
  • 1 cup (240 ml) heavy cream or milk
  • 1 lb (450 g) potato gnocchi (store-bought or homemade)
  • 1/2 cup (50 g) grated Parmesan cheese
  • Chopped parsley, for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large deep skillet over medium heat. Add chicken pieces seasoned with salt and pepper. Cook until golden, about 5–7 minutes. Remove and set aside.
  2. In the same pot, sauté diced onion for 2–3 minutes until softened; add minced garlic and cook for another 30 seconds.
  3. Stir in frozen mixed vegetables along with thyme and rosemary; cook for 2–3 minutes.
  4. Sprinkle flour over the mixture; stir to coat before gradually adding chicken broth while stirring.
  5. Incorporate heavy cream/milk and bring to a simmer until thickened slightly.
  6. Add back cooked chicken and gnocchi; simmer gently for 5–7 minutes until gnocchi is tender.
  7. Mix in grated Parmesan cheese until melted and well combined. Adjust seasoning if necessary.
