- 180 ml Full Cream / Whole Milk
- 180 ml Heavy / Thickened Cream
- 120 gr Passion Fruit Pulp (fresh or frozen)
- 1 1/2 teaspoon Vanilla Paste
- 6 Egg Yolks (medium size)
- 80 gr Caster Sugar
Instructions
- Prepare your ice cream maker by freezing the bowl for 12-24 hours.
- In a medium saucepan, whisk together Full Cream, Heavy Cream, Passion Fruit Pulp, and Vanilla Paste. Heat until just simmering.
- In a large bowl, whisk Egg Yolks and Caster Sugar until smooth.
- Gradually pour the hot dairy mixture into the egg mixture while stirring continuously. Return to saucepan.
- Cook over low heat for 5-10 minutes until slightly thickened; strain if desired.
- Chill the mixture in the fridge for at least 3 hours.
- Pour chilled custard into the ice cream maker and churn until thick.
- Transfer to a container and freeze for at least 3 hours before serving.
