  • 4 grams egg white powder (optional)
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams powdered sugar
  • Food coloring (red)
  • 1 1/3 cups confectioners' sugar
  • 4 tbsp unsalted butter (softened)
  • 1 tsp peppermint extract

Instructions

  1. Preheat oven to 150°C (300°F) and line baking sheets with parchment paper.
  2. In a bowl, whip granulated sugar and egg whites (add egg white powder if using) until stiff peaks form.
  3. Sift together almond flour and powdered sugar, then gently fold into the meringue until smooth.

  5. Pipe small circles onto prepared sheets and let rest for 30-60 minutes.
  6. Bake for 15-20 minutes until set but not browned.
