  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 yellow onions, thinly sliced
  • 4 garlic cloves, minced
  • 1 cup arborio rice
  • 1/2 cup dry white wine
  • 3 cups chicken stock
  • 1/3 cup grated parmesan cheese
  • 2 tbsp mascarpone cheese
  • Kosher salt and freshly ground black pepper to taste
  • Fresh thyme sprigs for garnish

Instructions

  1. In a heavy-bottomed saucepan, melt butter and olive oil over medium heat. Add sliced onions and cook for 15-20 minutes until golden brown. Stir in minced garlic during the last minute.
  2. Add arborio rice to the onion mixture; stir for about 2 minutes until coated. Pour in white wine and cook until mostly absorbed.
  3. Gradually add chicken stock one ladle at a time, stirring continuously until each addition is absorbed (about 20 minutes) until the rice is creamy and al dente.
  4. Stir in parmesan and mascarpone cheese until melted. Season with salt and pepper.
  5. Garnish with fresh thyme sprigs before serving hot.
