Ingredients
- 2 pounds chicken pieces (bone-in skin-on)
- 370 ml fire-roasted red peppers
- 4 Thai chili peppers
- 6 green onions
- 1 large lemon (zest and juice)
- 1/3 cup red wine vinegar
- 4 cloves garlic
- 1/3 cup olive oil
Instructions
- Blend all sauce ingredients except olive oil in a food processor until smooth. Gradually add olive oil.
- Marinate chicken in half the sauce for at least 4 hours, up to 24 hours.
- Preheat grill to medium-high heat (~425°F). Remove chicken from marinade.
- Grill chicken skin-side down for 5 minutes, then turn and baste with remaining marinade, cooking an additional 5 minutes.
- Ensure internal temperature reaches 160°F before removing from the grill to rest for 5 minutes.
