Ingredients
- 1/4 cup shredded coconut
- 1 large fresh pineapple
- 4 kiwis
- 8–10 fresh mint leaves
- 2 limes
- 2 tablespoons honey
Instructions
- Toast the shredded coconut in a skillet over medium-low heat for about 3-5 minutes until golden brown. Set aside.
- Cube the pineapple and add it to a large mixing bowl. Halve the kiwis, scoop out the fruit, slice into bite-sized pieces, and add to the bowl.
- Thinly slice mint leaves and add them to the bowl.
- In another bowl, zest and juice the limes, whisk in honey, then pour over the fruit mixture and toss gently.
- Cover and refrigerate until ready to serve. Before serving, sprinkle toasted coconut on top.
