- 400g sausages (any flavor)
- 1 onion (chopped)

- 3 tbsp all-purpose flour
- 1 liter chicken or vegetable stock
- 2 bay leaves
- 100g wild rice
- 3 medium potatoes (peeled and chopped)
- 375ml single cream
- Salt to taste
Instructions
- Heat olive oil in a soup pot over medium heat. Remove sausage from casings, add to the pot, breaking it up as it cooks until browned. Set aside.
- In the same pot, sauté chopped onion, celery, and carrots for about 10 minutes until softened. Add minced garlic and thyme; cook for an additional 30 seconds.
- Sprinkle flour over the mixture, stirring until combined into a roux. Gradually add chicken stock while stirring continuously until well mixed.
- Add bay leaves and wild rice; simmer for 30 minutes. Then stir in cubed potatoes and cook for an additional 15 minutes or until tender.
