  • 400g sausages (any flavor)
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp all-purpose flour
  • 1 liter chicken or vegetable stock
  • 2 bay leaves
  • 100g wild rice
  • 3 medium potatoes (peeled and chopped)
  • 375ml single cream
  • Salt to taste

Instructions

  1. Heat olive oil in a soup pot over medium heat. Remove sausage from casings, add to the pot, breaking it up as it cooks until browned. Set aside.
  2. In the same pot, sauté chopped onion, celery, and carrots for about 10 minutes until softened. Add minced garlic and thyme; cook for an additional 30 seconds.
  3. Sprinkle flour over the mixture, stirring until combined into a roux. Gradually add chicken stock while stirring continuously until well mixed.
  4. Add bay leaves and wild rice; simmer for 30 minutes. Then stir in cubed potatoes and cook for an additional 15 minutes or until tender.
  5. Pour in cream, season with salt to taste, then serve hot.
