  • 1 bell pepper, diced
  • 1 to 1.5 cups protein (lean ground turkey, black beans, shredded chicken)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup fresh spinach
  • ½ cup shredded cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the sweet potatoes, slice them in half lengthwise, drizzle with olive oil, sprinkle with salt, and roast cut-side down on a baking sheet for 35-45 minutes until tender.
  2. While the sweet potatoes roast, heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened. Add your choice of protein and cook through. Season with garlic, cumin, chili powder, salt, and pepper before adding spinach until wilted.
  3. Once the sweet potatoes are done, scoop out some flesh to create a cavity. Mix this flesh into the filling mixture and generously fill each potato half. Top with cheese if desired.
  4. Return filled sweet potatoes to the oven for an additional 10 minutes or until the cheese is melted.
