  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • Pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract
  • Whipped cream for serving (optional)

Instructions

  1. Preheat oven to 350℉ and line a cookie sheet with parchment paper.
  2. In a bowl, mix flour, pumpkin spice, and salt; set aside.
  3. Beat cream cheese and butter until smooth; add sugars and mix until fluffy.
  4. Incorporate egg yolk and vanilla; gradually add dry ingredients.
  5. Roll dough into balls, coat in coarse sugar, and place on the sheet.
