  • 2 cups unsalted butter (cubed, room temperature)
  • 2 tsp vanilla extract
  • 1 tsp almond extract
  • 12 oz frozen raspberries
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 cup fresh raspberries (for decoration)
  • ¼ cup slivered almonds (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round baking pans.
  2. Mix cake flour, baking powder, and salt in one bowl; cream sugar and butter in another.
  3. Add vegetable oil, egg whites, sour cream, vanilla extract, and almond extract to the butter mixture; combine with dry ingredients.
  4. Pour batter into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool on a rack.
  5. For raspberry filling: Cook raspberries, sugar, lemon juice, cornstarch, and water until thickened; cool before using.
  6. For buttercream: Whip egg whites until soft peaks form; gradually add powdered sugar until stiff peaks form; mix in butter and extracts.
