  • 6 large eggs
  • 2 cups half-and-half
  • 1 (14-ounce) can pumpkin purée
  • 3 tablespoons granulated sugar
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • Optional: powdered sugar
  • Optional: maple syrup
  • For the Streusel Topping: 1/4 cup all-purpose flour
  • 3 tablespoons packed light brown sugar
  • 3 tablespoons chopped, toasted pecans
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch kosher salt
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Prepare your slow cooker by greasing it with cooking spray or unsalted butter.
  2. In a mixing bowl, whisk together eggs, half-and-half, pumpkin purée, sugar, pumpkin pie spice, and salt until well combined.
  3. Layer half the brioche pieces in the slow cooker and pour half the custard over them. Repeat with remaining brioche and custard.
  4. For the optional streusel topping, combine flour, brown sugar, chopped pecans, cinnamon, nutmeg, and salt in a bowl. Drizzle with melted butter and mix until crumbly.
  5. Sprinkle the streusel over the casserole. Cover and cook on low for about 4 hours or until set.
