  • 1 cup (134g) vanilla wafer cookie crumbs
  • 2 tbsp (26g) sugar
  • 4 tbsp (56g) butter, melted
  • 12 ounces (339g) cream cheese, room temperature
  • 1/2 cup (104g) sugar
  • 3 tbsp (24g) flour
  • 1/2 cup (115g) sour cream
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • Blue gel icing color
  • Red gel icing color
  • 1/2 cup (120ml) heavy whipping cream, cold
  • 5 tbsp (36g) powdered sugar
  • 1/2 tsp vanilla extract
  • Sprinkles

Instructions

  1. Preheat the oven to 325°F (162°C) and line a muffin pan with cupcake liners.
  2. Mix vanilla wafer crumbs, sugar, and melted butter; press into liners to form crusts.
  3. Bake crusts for 5 minutes; cool while preparing filling.
  4. Beat together cream cheese, sugar, flour, sour cream, and vanilla until smooth; add eggs one at a time.
  5. Divide batter into three bowls; color one red and another blue.
  6. Layer batters into crusts: white on bottom, followed by red and blue.
  7. Bake for 18–20 minutes; cool in the oven with the door ajar for 10 minutes before chilling fully in the fridge.
  8. Whip heavy cream with powdered sugar and vanilla until stiff peaks form; pipe onto cooled cheesecakes.
