  • 1 bunch fresh asparagus (about 400g)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 medium red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Trim the tough ends of the asparagus by bending each spear until it snaps.
  2. Boil salted water in a pot. Add the asparagus and cook for 2 minutes until bright green. Transfer to an ice bath to halt cooking.
  3. While cooling, slice cherry tomatoes in half, dice cucumber, and thinly slice red onion.
  4. In a large bowl, combine cooled asparagus with tomatoes, cucumber, and onion. Toss gently.
  5. Whisk olive oil and balsamic vinegar in a small bowl; season with salt and pepper.
  6. Drizzle dressing over the salad just before serving and toss gently again.
