  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 3 tablespoons olive oil
  • 4 minced garlic cloves
  • Salt and black pepper
  • Fresh basil leaves
  • Balsamic glaze

Instructions

  1. Preheat your oven to 400°F.
  2. In a baking dish, mix cherry tomatoes, 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper. Roast for 20 minutes until slightly burst.
  3. In a blender, combine ricotta, 1 minced garlic clove, 1 tablespoon olive oil, fresh basil, salt, and pepper; blend until smooth.
  4. Slice the bread into 12 pieces. Brush both sides with garlic olive oil and toast in the oven for 10-12 minutes until golden.
  5. Assemble by spreading ricotta on toasted bread, topping with roasted tomatoes, fresh basil, and drizzling balsamic glaze.
