  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the garlic by cutting the top off, drizzling it with olive oil, seasoning with salt, wrapping in foil, and baking for about 30 minutes.
  3. Grease a 9×13-inch baking dish with butter.
  4. Thinly slice the potatoes using a mandoline slicer.
  5. Layer the potato slices upright in the greased baking dish.
  6. In a saucepan, combine heavy cream, milk, butter, half of the grated parmesan cheese, thyme, nutmeg, salt, and pepper; heat until melted.
  7. Squeeze roasted garlic into a paste; mix into the cream mixture.
  8. Pour over potatoes and cover tightly with foil; bake for about 40 minutes.
  9. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 30 minutes until bubbly and golden brown.
  10. Let cool slightly before garnishing with fresh chives and serving.
