  • 1 pound ripe medium vine tomatoes
  • 1 small whole garlic head
  • 2 tablespoons olive oil
  • 8 ounces pasta (spaghetti or fettuccine)
  • ½ cup ricotta cheese
  • Fresh basil leaves
  • Grated Parmesan cheese (for serving)

Instructions

  1. Preheat the oven to 400°F (200°C). Halve the tomatoes and place them cut side up in a baking dish along with the whole garlic head. Drizzle with olive oil, season with salt and pepper, and roast for 30 minutes.
  2. Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of cooking water before draining.
  3. Squeeze roasted garlic cloves into a blender along with roasted tomatoes, ricotta cheese, fresh basil, and some reserved pasta water. Blend until smooth.
  4. In a skillet over medium heat, combine cooked pasta with the sauce, adding more reserved water if needed. Season to taste.
  5. Serve immediately topped with grated Parmesan cheese and extra basil.
