  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 tablespoons sugar
  • 1 cup warm water (110°F)
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon finely chopped fresh rosemary
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons unsalted butter, melted
  • 12 sticks of mozzarella string cheese
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg, beaten
  • Coarse sea salt, for sprinkling

Instructions

  1. In a large bowl, dissolve yeast and sugar in warm water; let sit for about 5 minutes until frothy.
  2. Stir in flour, salt, chopped rosemary, and parmesan cheese until a dough forms.
  3. Knead on a floured surface for 5–7 minutes until smooth.
  4. Place dough in an oiled bowl; cover and let rise in a warm place for about 1 hour or until doubled.
  5. Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper.
  6. Boil water and baking soda in a large pot.
  7. Divide dough into 12 pieces; wrap each around a mozzarella stick, sealing well.
  8. Boil each pretzel for about 30 seconds, then transfer to the baking sheet.
  9. Brush with beaten egg and sprinkle with coarse sea salt.
  10. Bake for 12–15 minutes or until golden brown.
