  • 1/2 Cup (100g) Light or Dark Brown Sugar
  • 1/4 Teaspoon Fine Salt
  • 1/2 Cup (113g) Unsalted Butter (melted)
  • 1 1/4 Cup (150g) All-Purpose Flour
  • 1 1/2 Teaspoon Fine Espresso Powder
  • 1/2 Teaspoon Fine Salt
  • 1 Cup (200g) Light or Dark Brown Sugar, packed
  • 1 Whole Large Egg + 1 Large Yolk (room temp)
  • 1 Teaspoon Vanilla Paste or Extract
  • 4 Ounces (113g) Semi-Sweet or Dark Chocolate Bar (roughly chopped)
  • 1/2 Cup (78g) Homemade Toffee Bits, or store-bought
  • Flaky Sea Salt as garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a mixing bowl, whisk melted unsalted butter with brown sugar until smooth. Add fine salt, egg, egg yolk, and vanilla extract; mix well.
  3. In another bowl, combine all-purpose flour, espresso powder, and additional fine salt. Gradually add to the wet mixture until just combined.
  4. Fold in dark chocolate chunks and toffee bits evenly throughout the batter.
  5. Pour the batter into the prepared pan and spread it evenly. Bake for about 20 minutes until the top is shiny.
  6. Allow to cool for at least 10 minutes before sprinkling flaky sea salt on top and cutting into squares.
