  • 3 lbs chuck roast, cut into 2-inch chunks
  • 1 cup red wine (Burgundy or Pinot Noir)
  • 2 cups low-sodium beef broth
  • 8 oz fresh button mushrooms, sliced
  • 1 cup cipollini onions, peeled (or pearl onions)
  • 4 cloves garlic, minced
  • 4 medium carrots, sliced
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season the beef chunks generously with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the beef until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, sauté cipollini onions and mushrooms for about five minutes until softened.
  4. Deglaze with red wine, scraping up browned bits from the bottom of the pot; let it simmer for two minutes.
  5. Return beef to the pot along with beef broth, garlic, thyme, bay leaves, and carrots. Bring to a boil.
  6. Reduce heat to low, cover tightly, and simmer gently for about two hours until the meat is tender.
