  • Fettuccine or penne pasta
  • Butternut squash
  • Olive oil
  • Onion
  • Garlic

  • Vegetable broth
  • Heavy cream or cashew cream (vegan option)
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash, place on a baking sheet, drizzle with olive oil, sprinkle with salt, and roast for 25-30 minutes until tender.
