  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 8 oz fresh button or cremini mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, heat olive oil. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add sliced mushrooms and cook for about 5 minutes until tender.
  4. Stir in garlic powder and soy sauce, then add chicken broth and heavy cream. Simmer for 3-4 minutes until slightly thickened.
  5. Return the chicken to the skillet, allowing it to simmer in the sauce for another minute.
  6. Serve hot over rice or pasta, drizzled with sauce.
