Ingredients
- 5 ounces spring greens (chopped)
- 4 cups cooked chicken (chopped into cubes)
- 1 can black beans (14 oz, drained and rinsed)
- 1 can whole corn kernels (14 oz, drained)
- 1 cup cherry tomatoes (halved)
- 1 large ripe avocado (diced)
- ⅔ cup red onion (thinly sliced)
- ¾ cup shredded cheddar cheese
- ⅔ cup fresh cilantro (chopped)
- ½ cup plain Greek yogurt
- 3 Tbsp avocado oil or olive oil
- 1 Tbsp rice vinegar or apple cider vinegar
- 2 Tbsp fresh lime juice
- 1 Tbsp pure maple syrup
- 2 to 5 chipotle chilis in adobo sauce
- 1 large clove garlic (minced)
- Sea salt and black pepper to taste
Instructions
- Chop spring greens into bite-sized pieces.
- Dice avocado and halve cherry tomatoes.
- Slice red onion thinly.
- In a mixing bowl, combine Greek yogurt, avocado oil, vinegar, lime juice, maple syrup, chipotle chilis, minced garlic, salt, and pepper. Whisk until smooth.
- In a large bowl, layer chopped spring greens as the base followed by chicken cubes, black beans, corn kernels, cherry tomatoes, avocado, red onion, cheddar cheese, and cilantro.
