  • 5 ounces spring greens (chopped)
  • 4 cups cooked chicken (chopped into cubes)
  • 1 can black beans (14 oz, drained and rinsed)
  • 1 can whole corn kernels (14 oz, drained)
  • 1 cup cherry tomatoes (halved)
  • 1 large ripe avocado (diced)
  • ⅔ cup red onion (thinly sliced)
  • ¾ cup shredded cheddar cheese
  • ⅔ cup fresh cilantro (chopped)
  • ½ cup plain Greek yogurt
  • 3 Tbsp avocado oil or olive oil
  • 1 Tbsp rice vinegar or apple cider vinegar
  • 2 Tbsp fresh lime juice
  • 1 Tbsp pure maple syrup
  • 2 to 5 chipotle chilis in adobo sauce
  • 1 large clove garlic (minced)
  • Sea salt and black pepper to taste

Instructions

  1. Chop spring greens into bite-sized pieces.
  2. Dice avocado and halve cherry tomatoes.
  3. Slice red onion thinly.
  4. In a mixing bowl, combine Greek yogurt, avocado oil, vinegar, lime juice, maple syrup, chipotle chilis, minced garlic, salt, and pepper. Whisk until smooth.
  5. In a large bowl, layer chopped spring greens as the base followed by chicken cubes, black beans, corn kernels, cherry tomatoes, avocado, red onion, cheddar cheese, and cilantro.
  6. Drizzle the dressing over the top and gently toss until combined. Serve immediately or refrigerate for later.
