  • 1 cup black beans (drained and rinsed)
  • 1 cup spinach (chopped)
  • 1 cup diced red bell pepper
  • 1/4 cup diced jalapeno (de-seeded)
  • 1/2 TBS cumin
  • 1/2 TBS chili powder
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 cups Monterey jack cheese
  • Egg roll wrappers (20 count)

Instructions

  1. In a large mixing bowl, combine cooked chicken, corn, black beans, spinach, red bell pepper, jalapeno, cumin, chili powder, salt, and pepper; mix well.
  2. Stir in shredded Monterey jack cheese until evenly distributed.
  3. Lay out an egg roll wrapper on a clean surface and place 2-3 tablespoons of filling in the center.
  4. Roll the wrapper according to package instructions: fold the bottom corner over the filling, tuck in the sides tightly, and roll towards the top corner while sealing edges with water.
  5. Place assembled egg rolls on a baking sheet; freeze if desired or proceed to cooking.
  6. Fry in preheated oil or bake at 375°F (190°C) until golden brown.
