  • 4 boneless, skinless chicken breasts
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper, or to taste
  • 3 tablespoons olive oil or coconut oil
  • 1 medium onion, chopped
  • 1 jalapeño pepper, seeded and chopped
  • 1 tablespoon fresh ginger, chopped
  • 3 cloves garlic, minced
  • 3 medium tomatoes, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • 14 ounces unsweetened coconut milk
  • 2 tablespoons fresh parsley or cilantro, chopped

Instructions

  1. In a mixing bowl, combine cumin, cayenne pepper, turmeric, salt, and garlic powder. Coat chicken breasts evenly with the spice mixture.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 6-8 minutes on each side until browned.
  3. Add onions and jalapeño to the skillet; sauté for 5 minutes until softened. Stir in garlic and ginger; cook for another minute.
  4. Add chopped tomatoes and lemon juice; cook for 5 minutes until tomatoes start breaking down.
  5. Pour in coconut milk; let it simmer for 5 minutes.
  6. Return the chicken to the skillet; cover and simmer for an additional 5 minutes.
  7. Garnish with parsley or cilantro before serving.
