  • 2 medium sweet potatoes
  • 1 pound lean ground beef
  • 1½ tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon cumin
  • 2 teaspoons smoked paprika
  • 1 cup cottage cheese
  • 2 avocados
  • ¼ cup hot honey
  • Chili flakes
  • Sliced green onions

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube sweet potatoes. Toss with olive oil, salt, black pepper, garlic powder, chili powder, and cumin. Spread on a baking sheet and roast for 25 minutes until golden and tender.
  3. In a skillet over medium-high heat, cook the ground beef with salt, garlic powder, smoked paprika, cumin, chili powder, and black pepper for 7–10 minutes until browned.
  4. Assemble bowls by layering roasted sweet potatoes and cooked ground beef. Top with cottage cheese and avocado slices. Drizzle hot honey and finish with chili flakes and green onions.
