  • ½ cup fresh spinach, chopped
  • 2 garlic cloves, minced
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ cup grated parmesan cheese
  • ½ cup mozzarella cheese, cubed
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, egg, parmesan cheese, salt, and pepper. Mix gently until well combined.
  3. Take a portion of the mixture (about the size of golf balls), flatten it in your palm, place a cube of mozzarella in the center, and shape it around the cheese into a ball.
  4. Heat olive oil in a skillet over medium heat and sear the meatballs on all sides until browned (about 5-6 minutes).
  5. Transfer the meatballs to a baking dish and bake for 10-12 minutes until cooked through.
