  • 4 large bell peppers
  • 1 tbsp olive oil
  • 1 medium yellow onion, finely chopped
  • 34 cloves garlic, minced
  • 10 oz frozen chopped spinach (thawed and drained)
  • 15 oz whole milk ricotta cheese
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • ¼ cup plain breadcrumbs (optional)
  • 1 tsp dried Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice each bell pepper in half lengthwise and remove seeds.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic until fragrant.
  4. In a mixing bowl, combine spinach, ricotta, egg, Parmesan, breadcrumbs (if using), Italian seasoning, salt, and black pepper. Add the sautéed onion and garlic.
  5. Generously stuff each pepper half with the filling mixture and place them upright in a baking dish.
  6. Cover with foil and bake for about 25 minutes; remove foil in the last 10 minutes to brown tops.
