- 1/2 cup fresh mint leaves, chopped

Instructions
- Cook the rice vermicelli noodles in boiling water according to package instructions. Drain and rinse under cold water.
- While the noodles cool, slice the carrots, bell peppers, cucumber, and green onions.
- In a large bowl, combine the shredded vegetables with bean sprouts, cilantro, mint leaves, and green onions.
- Add the cooled vermicelli noodles to the bowl and gently toss everything together.
- In a separate small bowl, whisk together the grated ginger, soy sauce, rice vinegar, honey or agave syrup, sesame oil until smooth.
