  • 2 tsp ground cumin
  • 1 tbsp olive oil (for steak)
  • 1 tsp garlic powder
  • 1½ cups whole milk
  • ½ tsp ground cumin
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 1 cup shredded Monterey Jack cheese
  • 2 cups broth or water
  • Salt, as needed
  • 1 tbsp olive oil (for rice)
  • 1 cup long-grain white rice
  • 1 tsp garlic powder (for rice)
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños

Instructions

  1. Prepare the steak by patting it dry and seasoning it with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  2. Heat a skillet until hot and sear the steak for 4–5 minutes per side. Let it rest before slicing.
  3. Cook the rice by rinsing it under cold water, then toasting in a pot with olive oil before simmering with broth for about 18–20 minutes.
  4. For the queso sauce, melt butter in the same skillet, sauté garlic, add milk to simmer gently, then gradually stir in shredded cheeses until smooth. Season to taste.
  5. Assemble by spooning rice onto plates, topping with sliced steak and queso sauce. Garnish as desired.
