Instructions

  1. Preheat oven to 425°F (220°C) and line a cupcake pan with paper liners.
  2. In a bowl, mix together flour, sugars, and salt for streusel topping; add melted butter until coarse crumbs form.
  3. In another bowl, combine dry ingredients: flour, baking powder, and salt.
  4. Whisk wet ingredients: egg, granulated sugar, Greek yogurt, vegetable oil, and vanilla extract until pale yellow.
  5. Fold wet ingredients into dry ingredients gently; add diced strawberries.
  6. For the cream cheese filling, blend softened cream cheese with sugar, cornstarch, and vanilla until smooth.
  7. In muffin cups: layer muffin batter, followed by cream cheese mixture, then cover with more batter.
  8. Top each muffin with streusel crumbs and reserved strawberries before baking for about 22-25 minutes at 350°F (175°C).
