Instructions
- For the tart crust, combine flour, butter, and powdered sugar in a food processor until crumbly.
- Add egg yolk and ice water; pulse until dough forms. Chill for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out chilled dough into a 9-inch tart pan and bake for 15-18 minutes until golden brown. Cool completely.
- Prepare custard cream by warming milk in a saucepan. In a bowl, whisk together sugar, egg yolks, and cornstarch; gradually add warm milk while whisking. Cook over low heat until thickened; stir in vanilla and butter.
- Spread custard evenly over cooled tart crust and arrange sliced strawberries on top in concentric circles.
- Mix apricot jam with warm water to create a glaze; brush over strawberries for shine. Chill for at least 30 minutes before serving.
