Ingredients

Scale
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • 1 small or medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp kosher salt
  • 1/4 tsp ground nutmeg
  • 15 oz canned pumpkin puree
  • 2 cups low-sodium vegetable or chicken broth
  • 1 tbsp all-purpose flour
  • 1 cup half and half
  • 3 oz soft gorgonzola cheese, cubed
  • 16 oz cooked gnocchi
  • 6 sage leaves, finely sliced

Instructions

  1. In a large pot, heat vegetable oil and butter over medium heat. Sauté diced onion until translucent (about 5 minutes), then add minced garlic and cook for an additional minute.
  2. Stir in kosher salt and ground nutmeg before adding canned pumpkin puree. Cook for about 2 minutes, stirring constantly.
  3. Gradually pour in the broth while whisking to avoid lumps; bring to a gentle simmer for 10 minutes.
  4. In a small pan, melt additional butter and whisk in flour until smooth. Gradually add half-and-half while stirring until thickened.
  5. Mix the thickened mixture into the simmering soup; stir in cubed gorgonzola cheese until melted.
  6. Finally, add cooked gnocchi and sliced sage leaves; simmer for 5 more minutes before serving hot.
