Ingredients
- 2 cooked & shredded chicken breasts
- 2 zucchinis, sliced
- 1 cup corn kernels
- 1/2 cup black beans
- 1/2 cup salsa
- 1 tsp chili powder
- 1 tsp cumin
- 1 cup shredded cheddar cheese
- Olive oil, salt, and pepper
Instructions
- Preheat your oven to 200°C (400°F).
- In a skillet over medium heat, add olive oil and sauté the zucchini slices for about 3–4 minutes until tender.
- In a mixing bowl, combine the shredded chicken, corn, black beans, salsa, chili powder, cumin, salt, and pepper; mix well.
- In a baking dish, spread half of the chicken mixture on the bottom. Layer with sautéed zucchini and top with the remaining chicken mixture and shredded cheese.
- Bake in the preheated oven for about 20 minutes or until bubbly and golden brown.
