Ingredients
- 1 tablespoon sesame oil
- ¼ cup onion (diced)
- 2 cloves garlic (minced)
- 1 tablespoon fresh ginger (minced)
- 10 oz ground chicken
- ¼ cup Tamari (or soy sauce)
- 2 tablespoons Thai sweet red chili sauce
- Juice of 1 lime
- ⅓ cup cashews (chopped)
- Butter lettuce leaves
Instructions
- Heat sesame oil in a non-stick skillet over medium-high heat. Add diced onions and sauté for 2–3 minutes until translucent.
- Stir in minced garlic and ginger; cook for another 2 minutes.
- Add ground chicken, breaking it up with a spatula; season with salt and pepper. Cook until no longer pink, about 3–4 minutes.
- In a bowl, mix Tamari, chili sauce, lime juice, and maple syrup. Pour over the cooked chicken along with chopped cashews. Toss to combine and heat through for another 2 minutes.
- Remove from heat and stir in shredded carrots, scallions, and cilantro.
- Assemble wraps by placing the chicken mixture in butter lettuce leaves; drizzle with additional sauce if desired.
