- 2.5 lbs chicken thighs
- 3 tbsp lime juice
- 1/4 cup fish sauce
- 2 tbsp Thai sweet chili sauce
- 3 tbsp vegetable oil
- 3 tbsp brown sugar
- 3–4 cloves garlic
- 1 inch ginger root (peeled)
- 1/2 shallot
- Optional: red pepper flakes
Instructions
- In a blender or food processor, combine lime juice, fish sauce, Thai sweet chili sauce, vegetable oil, brown sugar, garlic, ginger, shallots, and red pepper flakes until smooth.
- Place chicken thighs in a mixing bowl and pour marinade over them. Ensure they are fully coated. Cover and refrigerate for at least 4 hours or up to 24 hours.
- Preheat your grill or skillet over medium-high heat.
- Cook the marinated chicken for about 6-7 minutes on each side until golden brown and the internal temperature reaches 165ºF.
- Remove from heat, garnish with chopped cilantro if desired, and serve.
