- ¼ cup cilantro, chopped
- ½ cup roasted peanuts, roughly chopped
- ½ cup edamame (optional), shelled and cooked
- 3 tablespoons peanut butter (creamy or natural)
- 2 tablespoons soy sauce (low-sodium recommended)
- 3 tablespoons lime juice, freshly squeezed
- 1 tablespoon honey or maple syrup
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1 teaspoon ginger, freshly grated
- 1–2 teaspoons sriracha or chili sauce (adjust to heat preference)
- 1–2 tablespoons water, to thin the dressing as needed
Instructions
- Prepare the Vegetables: Shred green and red cabbage, julienne carrots, and slice bell pepper and cucumber. Combine all veggies in a large bowl.
- Make the Dressing: In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, garlic, ginger, and sriracha. Adjust the consistency with water as needed.
