- 1/2 cup buttermilk
- 1 large egg
- 3/4 cup feta cheese crumbles
- 1/2 cup reconstituted sun-dried tomatoes, chopped
- 1/2 cup spinach, chopped
- 1 tbsp bacon grease or olive oil
- 1/3 cup walnuts, chopped (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Sauté chopped spinach in bacon grease or olive oil until wilted; set aside.
- In a large bowl, mix whole wheat flour, all-purpose flour, baking powder, baking soda, and sugar. Grate in cold butter and mix until crumbly.
- Fold in feta cheese, sun-dried tomatoes, sautéed spinach, and walnuts if desired.
- In another bowl, whisk together egg and buttermilk then add to the dry mixture; fold gently until combined.
- On a floured surface, shape the dough into a circle about 1 inch thick and cut into eighths.
- Place on a parchment-lined baking sheet and bake for 10-15 minutes or until golden brown.
