  • 3 eggs
  • 1 ¼ cups granulated white sugar
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon cream of tartar (or substitute with baking powder)
  • 1 teaspoon salt
  • 2 cups grated zucchini

Instructions

  2. In a large bowl, beat together melted coconut oil, eggs, sugar, and vanilla until well combined.
  3. In another bowl, whisk together flour, cinnamon, baking soda, cream of tartar, and salt.
  4. Combine wet and dry mixtures until just mixed; fold in grated zucchini gently.
  5. In a small bowl, mix sugar, cinnamon, and cream of tartar for the topping.
  6. Fill loaf pans halfway with batter, sprinkle topping over it, then add remaining batter and more topping.
  7. Bake for 45-50 minutes until a knife inserted comes out clean.
  8. Allow cooling on a wire rack before slicing.
