  • 2 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract

  • 2 cups shredded zucchini
  • 1 small carrot (shredded)
  • 3/4 cup rolled oats
  • 1 cup chopped walnuts
  • 1/2 cup salted butter (room temperature)
  • 8 ounces cream cheese (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a bowl, mix vegetable oil, sugar, and eggs until smooth; add vanilla.
  3. Combine flour, cinnamon, salt, baking soda, and baking powder in another bowl. Gradually mix into wet ingredients.
  4. Fold in zucchini, carrot, oats, and walnuts until just combined.
  5. Pour batter into the prepared pan and bake for about 24 minutes or until toothpick comes out clean.
  6. For frosting: beat butter and cream cheese until smooth; mix in vanilla and powdered sugar until creamy.
  7. Once cooled, spread frosting over bars and cut into squares.
