- 1 large egg
- 2–3 large ripe heirloom tomatoes
- 2 tablespoons Dijon mustard
- 8 ounces goat cheese (sliced)
- Fresh thyme and chives for garnish
Instructions
- In a food processor, mix flour and salt. Add cold butter and pulse until crumbly. Incorporate egg and cold water until combined. Form into a disc, wrap in plastic wrap, and chill for at least 30 minutes.
- Preheat the oven to 400°F (200°C). Roll out dough on a floured surface to about ¼ inch thick and transfer to a lined baking sheet.
