- Zest of 1 lemon
- 5 egg yolks
- 2.5 cups milk
- ¼ cup cornstarch
- ½ tsp vanilla paste or 1 vanilla bean
- ¼ cup pine nuts
Instructions
- Prepare the pastry by combining flour, sugar, baking powder, and salt in a food processor. Add butter and pulse until crumbly. Mix in the egg and lemon zest, then chill the dough for at least 30 minutes.
- For the custard filling, heat milk with vanilla until just below boiling. Whisk together egg yolks, cornstarch, and sugar in a bowl. Gradually incorporate hot milk into the egg mixture while whisking continuously; return to heat until thickened.
- Preheat the oven to 350°F (175°C). Roll out the chilled pastry, fit it into a tart pan, pour in the custard filling, and top with pine nuts. Bake for about 60 minutes or until golden brown.
