  • 1 large Napa cabbage (56 lbs)
  • 1 cup Korean coarse sea salt
  • 5 cups water
  • 1 pound Korean radish
  • 1/4 large Korean pear (optional)
  • 34 scallions
  • 1 piece dasima (dried kelp), about 2 to 3 inch square (optional)
  • 1 tablespoon glutinous rice flour
  • 1/2 cup gochugaru (adjust to taste)
  • 1/4 cup saeujeot (salted and fermented shrimp, roughly chopped)
  • 3 tablespoons myulchiaekjeot (fish sauce)
  • 34 raw shrimps (about 2 ounces, finely minced or ground) (optional)
  • 3 tablespoons minced garlic
  • 1 teaspoon grated ginger
  • 1/2 cup water or dasima broth

Instructions

  1. Cut the Napa cabbage lengthwise and separate it into quarters.
  2. Dissolve salt in water and soak each cabbage quarter for 6-8 hours.
  3. Rinse thoroughly, then drain.
  4. Prepare dasima broth by boiling dried kelp in water; cool.
  5. Mix rice flour with water or broth until thickened.
  6. Combine garlic, gochugaru, and other seasoning ingredients to form a paste.
  7. Add radish matchsticks and scallions into the mixture; combine well.
  8. Stuff the cabbage quarters with the seasoning mix.
  9. Pack tightly into an airtight container and let ferment for 1-2 days at room temperature before refrigerating.
