Ingredients

  • 500 g Gnocchi
  • 3 tbsp Truffle Butter
  • 1 1/2 tbsp Flour
  • 250 ml Milk
  • 70 g Cheddar (grated)
  • 30 g plus 1 tbsp Parmesan (grated)
  • Salt and Pepper
  • 30 g Breadcrumbs
  • 1 clove Garlic (crushed)
  • 1/2 tbsp Parsley (chopped)

Instructions

  1. Preheat the oven to 190°C/375°F.
  2. Cook the gnocchi according to package instructions, drain, and set aside.
  3. In a large saucepan, melt 2 tablespoons of truffle butter over medium heat. Add flour and whisk for about two minutes until it forms a paste.
  4. Gradually whisk in milk until the sauce thickens. Stir in cheddar and parmesan until melted; season with salt and pepper.
  5. Fold in cooked gnocchi until well coated.
  6. In a food processor, combine remaining truffle butter, breadcrumbs, garlic, and parsley; blend until mixed but chunky.
  7. Transfer gnocchi mixture to a baking dish, top with breadcrumb mix, and bake for 10–15 minutes or until golden brown.
